What's actually going to happen is someone is going to really want to beat Soma (Azami because he's the anathema to Azami's philosophy, Eizan because he's the anathema to not being butthurt) so they're going to try to give him a chance that he's going to take.
Either that or deus ex machina happens.
The problem with this arc is that it's so different. It changes the entire direction of the manga to where things really can't be the same again, but there really was no problem with the status quo. And now there's so much on the line that Souma can't lose without the manga ending, but the odds are so horrifically stacked against him that he really can't win.
The same is kinda true for the whole arc. Azami changed everything so there's really no chance to fight back, but he's a character in a manga whose premise is that the pleb fights back against the artisans. Everyone can kind of smell the asspull.
