For example, Shion's arc just makes her out to be an insane murder, but the VN makes her seem that she wants answers, acting as a surogate to the reader wanting answers, and killing anyone who might be in charge, then kills innocents such as Satoko just for sadistic joy. The anime removed Satoshi asking Shion if she could take care of his sister while he was gone, and Shion remembers that promise after torturing her to death and crying on her dead body. That was funny but it was omitted in the anime.
The VN, like the anime, shows how awesome torture and murder is but then bitch slaps you for enjoying it because only freaks enjoy those sort oft things, and contrasts it with the power of friendship.
The anime never does that. This is why Higurashi is remembered as being more of a horror anime more than anything else.
The VN also brings a lot of SoL moments and games before everything goes to shit. The anime has that at the start but it's not really as pronounced or important as in the VN. In the VN, you actually start to miss 'the good times' when shit hits the fan.
The VN is a masterpiece honestly.
