Succubus = sub (under, beneath) + cubare (to lay down) = to lay under
The idea of one being male and the other female comes from conventional ideas of dominance being masculine while submission is feminine. There's also the fact most men end up seduced by women for obvious reasons and vice-versa.
If you wanted to you could technically have a twinky little femmeboi demon acting like a regular succubus while an amazonian dominatrix futa demoness fulfills the incubus role.
