Take it from an actual bartender, don't waste time on bartending school. Get a job right now at the fanciest restaurant that will hire you. Keep working and applying for fancier resturaunt while you work. Make sure you follow the local owners in your area. Spend evenings off (you won't have many) in the bars and restaurants you like. Talk to owners. Ask what's new. Ask what they have that no-one else has (they'll make some shit up, but your learning what your future bosses look for).
This is shit you can do right now while you're under 21. When you turn 21, apply for bar jobs. Don't go for barback positions. Barbacking is just manual labor. And your ability to move up depends on whether the bartender your working for likes you. And chances are he won't. Since his efficiency effects his tips and your work effects his efficiency. And so chances are (since your 20 years old ) you're not going to be up to his standards.
If you've experience serving, you've got client repor experience, which is the basis of bartending. Next learn drinks. Keep up with what's new and what's good or bad. Learn about every fucking thing that happens in you area. Most resturaunt and bar owners know and talk to each other, so don't burn any bridges or make any enemies. Once you've established your rep, you'll be bartending somewhere small, but you can work your way up. Bartending is hard work. Lots of people drop out because they can't make good money. But if you love to serve and getting a satisfied smile out of someone gives you a sense of pride, if you love drink and food like your fucking Orson Wells, if you're not a clumsy retard who can't hold a bottle without dropping it or a conversation without drooling and nodding, you can be a great bartender.
