Whiskas is pretty shit quality-wise but you've got to take what you can get under those circumstances, eh. You might want to look into feeding raw since it sounds like it'd be not only more nutritious, but much more convenient for you. Don't worry about wet food being more calorie-heavy - even if that were true (it's not), it'd be an easy fix to just feed less of it. Cats are usually lactose intolerant outside of kittenhood, so when she gets older steer clear of dairy products except in small amounts.
Kittens tend to be pretty stop-and-go in terms of energy levels. When my cats were babies they'd play hard for ~20 minutes, then sleep hard for half an hour, rinse and repeat ad infinitum. It's hard to get them on a "schedule" because of that, but I'd recommend a good play session shortly before bedtime, as it'll hopefully keep her quieter and asleep for longer.
Earlier than January would be better, but even if she does go into heat it's not the end of the world. The surgery will be bloodier/riskier and there's a greater risk of developing mammary tumors later in life, that's all. Boarding post-surgery really is just personal choice... sometimes it can be nice to keep them confined to a cage for a day afterwards to minimize chances of self-injury due to the kitten's own rambunctiousness. I boarded mine for a day after surgery but she'll likely do fine at home with you, too.
