I have a red claw emperor (a tiny one) and an Asian forest scorpion. Both are hands off like the other anon said. Some like regular Emperors (good luck finding a cheap one) can be handled sometimes (don't do it too often to stress the animal) but there is still the risk of being pinched (Emperors pinch more than sting) or stung, the venom is not considered medically significant (it's compared to a bee sting) but like bees if your allergic you can die.
There are tons of care sheets for scorpions and vary from species to species but generally they're really easy to take care of. Food is anything smaller than them that moves and terreriums can be as elaborate or bare (as long as they have a hide and access to water for some species) as you want. Species for beginners are the aforementioned emperor and Asian forest scorpions and the desert hairy scorpion (a large American desert dwelling species) but again most are very easy to care for.
