OP, I think that you should look into the basis of lightsaber combat through the fiction first and then derive where each form takes its roots in reality.
For example, form 2 is primarily based on fencing. Count Dooku uses that form in the fiction.
But most of these lightsaber schools are guys who know nothing. You'd be better off getting friends together after studying different sword arts and then sparring with lightsabers.
My TKD teacher actually would keep toy lightsabers in the back of a closet for his weapons class once in a while, for fun.
