So I worked for this shady as fuck delivery restaurant earlier, I started as a delivery driver and within a couple weeks I was basically running the place. But I was pulling in a fuck ton of money for the shady ass owner. So about a month ago after giving it some serious thought and set off on my own.
I started like the owner of the previous company, I bought some kitchen equipment and started cooking and delivering out of my own apartment. I buy all my supplies at sams and buy food stamps from bums in front of the day center at a .5 conversion, I also don't pay dales tax because of the food stamps.
I built a website, sunk some money in yelp and fb advertising, and buy about 1,000 menus a week to place a bars, liquor stores and apartments.
I'm currently doing about $950/wk in gross sales and they continue to climb. My wife is about to quit her job to help in the kitchen as volume is growing.
I want to legitimize, I'm slowly increasing menu prices since food cost will increase when I stop buying food stamps. Also at the rate I'm going I'm gonna have to actually hire people that aren't my wife soon.
What steps do I need to take to start legitmizing?
I've been looking at subletting a commercial kitchen in the evening since my business hours are evening to late night. I figure I can rent the kitchen from a breakfast/lunch only diner, I've already got a food handlers permit, so health department would be a non issue that way as long as the other people keep their kitchen compliant.
I'm wondering what I need to do as far as getting my own license to permit and such and how to go forward hiring people at this stage.
Also what are the real risks running this in my apartment. I can't find anything except maybe health department and zoning fines at the moment.
