Anyone else here hate turkey? I think it's too easy to dry it out and even when it's juicy, it just isn't very good.

This year for Thanksgiving I'm thinking of doing quail or pheasant instead.

Brine has salt to break down tissue, that's why brined meat is more tender. Turkey brines usually have a bunch of other seasonings for flavor as well.

Pheasant is, like turkey, easily dried out. Unlike turkey, it's worth doing right. Pheasant tastes great. I vote you go for that, or for duck. Quails are delicious, but an important part of Thanksgiving to me is having a big roasted showpiece at the center of the table.

You don't know what you're talking about.

Time after the kill isn't the big deal about the flavor, the big deal with the flavor (and yes, there is a significant difference in the farmed breeds, large farm breeds, and wild breeds) tends to be age and the way they grow.

Large farm breeds balloon the fuck up not because they build muscle fast, but because their muscle retains the fuck out of water (which doesn't have a flavor). The varieties that don't do this will have a more pronounced flavor concentration. Wild and non-corporate farm breeds also tend to take longer to grow to harvesting size which also gives more time for other chemical processes that deepen the flavor to occur.

This is correct, but this does not apply to any of the birds in your supermarket. Industrially farmed turkeys are all the same breed - one that has been carefully bred to reach slaughtering weight quickly on a cheap diet without getting sick. Same is true for chicken. And pork.

Modern industrial farming doesn't leave much to chance. Hell, most of our agriculture in the US is growing corn plants that are exact clones of each other. This system maximized the farmer's convenience and profit (supposedly), but often at the expense of flavor.

Turkey means both female and male bird, if I got this right.
For Christmas (no thanksgiving in Yurup), the usual bird is a turkey hen.
From TV shows featuring a ridiculously large prop in Thanksgiving specials, I assume Muricans eat the male, but I wanted confirmation.

If Malcom in the Middle and Friends depict reality, I suggest you try turkey hen. I imagine it's easier to cook a smaller roast (or two or 3, depending on family size), and taste might be better. Good alternative to duck, goose, quail, pigeon, etc.
