I later learned that this 2nd-cook through was primarily to follow government regulations and prevent food poisoning, but fuck it it made it all better.
The meat was so crispy, tender, and juicy. I think it was just a stack of marinated chicken thighs, but I might be wrong. It wasn't lamb, and pork is halal but it was so savory. Mixed with the pickled veggies and sauce... goddamn.
There are so many brown people where I live, they could make a killing if they opened a joint like that here.
