To approximate the cheese (which I've seen at publix recently, so ask your store manager if he can get it for you), I'd go for a "fresh cheese" such as you'd get in that hispanic section. There are two kinds of queso blanco or fresca, one is indeed crumby like feta, and that's the flavor of curds, that crumbly one. The other more firm queso is also fresh and more like a combination of jack and mozzarella. If you can buy really fresh mozzarella in liquid (or make your own!), you should try that as best choice. The curds should "squeak" next to your teeth.
A&W and a couple other chains sell deep fried cheddar curds, so maybe you'll get to try the real thing that way and use your own foodie senses for approximating it yourself. Mozz and fresco cheeses are not _cheddar_, and new cheddar is kind of colby-ish and rich in creamy dairy flavor.
