G'day mate,

Lazy cunt here. I just stick with these, chuck them in the dish washer and sharpen them every 6 months on a whetstone.

Some people here would hang me out to dry for such lax practices, but that's them doing what I see is extra work for nothing.

I think the standard wisdom is that Victorinox makes a damn good chef's knife for the money.

Frankly a sharpening stone (or better, 2) is probably more important than having a really nice knife.

They arent the most beautiful knives, but I agree that from a value for money perspective, Victorinox are decent.

Bought a set about 8 years ago and they are still going strong.

The down side is they are expensive as hell.
I spent a month and 750$ buying one knife at a time to piece a 20 knife set together off of ebay. I did save about 800$ doing it this way as opposed to going to a store or amazon.

2. Paring knife

That's it.
You don't even really need the paring knife.
you can get a bread knife if you really want but how often are you slicing bread and how often are your other knives unavailable for it?

Agree here.

10" Chef knife, Paring knife, Bread knife / serrated slicer

If you never buy crusty breads you can get away without the bread knife, although I still find it useful in certain cases (slicing meats with a strong rub crust for example).

You should have a sharpening steel and/or sharpening stones. I use the sharpening steel roughly daily, and only use stones once a year or so. If you don't have stones you can take your knives to a professional for sharpening when you feel the need.

All my knives are Henckels Froidur and they have served me well for 5 years now.

$5 knives from the Asian grocer and pick up a whetstone, you'll work out the proper angle eventually. Either way, the knives will last you at least a year at least. I've had my last batch for 5. Unless you're planning on living for another 150 years, it's a much better and cheaper option.

Look at the knife in your picture, you can't wash it properly because you'll fuck up the wood veneer, yet it's etched with perfect places for food to get stuck and gross shit to grow in. It makes zero sense design wise. I guess if you're going to waste money at least go for Global.

Expensive knife fetishism is major Freudian territory.

Veneer is a thin sheet of wood that you glue onto other woods to make the end product look nicer.
Japanese knife handles are carved from solid blocks, there is no veneer.
