Howdy /ck/!
Has anyone ever made tempura with chickpea brine as an egg replacement?
I want to make fried baby portabella mushrooms with sukiyaki dipping sauce.

I use chickpea flour to make pakoda, which is like Indian tempura, so it's kinda the same thing as you're talking about.
It comes out great.

if the first batch doesn't come out, add some cornstarch to the mix, that also helps adherence

It's fantastic, the batter was flour, salt, cornstarch, seltzer water and chickpea brine from a can.
it's crispy as hell and nice.
great idea, doing zucchini now.

It's also the water canned chickpeas are packed in.

no but I did try aquafaba meringues
it fluffed up very nicely but melted in the oven
