Anybody have an experience with ordering from the "secret" part of the menu in ethnic restaurants?

I'm quite the socially inept and I don't know how to go about it.

Living in the west as I do now, though, I and two white friends of mine routinely try to order things off the Chinese language menu, combining our respective knowledge of reading chingchong to try to figure out the items.
With my limited knowledge, I think the second item under the third heading (which says "bird dishes," if I'm not mistaken) is a tea-smoked dish, I think. I recognise the chingchong for tea and the chingchong for bird but not the other two characters.

Usually, my friends and I figure it out correctly, but once or twice, we've been surprised, sometimes pleasantly, and sometimes not. One time, we got a whole, deep-fried carp to share when we expected a single lobster. Don't know how we screwed that one up, but it was a pleasant surprise.
Another time, we thought we were getting salt-and-pepper fried chicken but wound up getting deep-fried pigeon with a dish of ground white-and-sichuan peppercorns mixed with salt to dip the bird into. That was not as pleasant.

Nope. Not bird. It's meat. They're meat dishes. It's some dish of tea and some kind of meat. I don't know. I have failed. I'm not very good with reading chingchong.

虾 = shrimp, pronounced xia1
鱼 = fish, pronounced yu2
猪 = pork, pronounced zhu1
鸡 = chicken, pronounced ji1
牛 = cow, pronounced niu2

Get a gist of the menu, identify what kind of dish you want, discard that menu and just ask them to make you what you have in mind.

If they can't do it or don't have the ingredients, they'll sell you on the closest substitute.

I don't know if I've ever encountered a Chinese place too rigid to do this.
