Cook brunoise sweet onions, mid heat. As soon as they are starting to look clear, add sugar of your choice. Caramelize that shit.
With scissors, cut the chicken in stripes.
Add it to the onion mixture. Start adding seasoning of your choice. Mix.
Add some black beans without the liquid content. Canned is ok, Goya is a nice brand.
You could add some sweet corn and green italian bell peppers at the end. You want it to cook a bit but keeping it crunchy.
Taste for salt.
You could do guacamole, pico de gallo and buy some creme fraiche and layer all shit together in a long tortilla.
