Post the recipe.

When I make curry I don't add any water. Between the liquid in the onions and the tomatoes there is usually enough to make a sauce. If I want something thicker I add cream and butter.

Calling it Muslim food is just trying hard to show off how little you care about this. Also, preaching conservatism in reference to food is baffling. For millennia even tribes who hate each other have eaten each others cuisine if it's good. Eh, Indian is good but it's not great. Malaysian curries are by far a lot better. Actually, just speaking of curries I'd say Malay is the best, followed by Indonesian, Thai, Cambodian, Indian, Chinese and then Japanese.

Dude Indian and Chinese have so much regional variation that to even call them one cuisine is a travesty. Malay Cambodian etc are great but only comparable to a single regional cuisine from India or China. You might really like the dishes you've tried out of those but to put them above the two juggernauts of Asian cuisine is like saying you think Danish cuisine is better than Mediterranean.

first you should have coconut milk or at least some cream.
chop the chicken in dices, cook undil its sealed, remove and reserve. chop onions and add to the same oven that you cooked the chicken, add salt, exude. add curry, stir. add chicken, add coconut milk or cream. cook in minimum fire
