All the meat except the nuggets and popcorn gets delivered from a cooler truck in the morning in sealed plastic bags in it's marinade 4 times a week, I think it was Tuesday, Thursday, Saturday and Sunday. They go into the a refrigerator room that keeps them cool but it isn't a freezer room. Then when you cook them you open the bag, and put them in the flour, dip them in water then flour them again, then put them on the rack and put them in the fryer, I think I remember someone calling it a pressure fryer but I'm not sure. All the fryers have automated times so you just have to push the button for whatever you're dropping and open it when the alarm goes off. No crumbs, just flour as much as I remember but it was 2 years ago so I might be mistaken.
The frozen stuff is just the chips, popcorn and nuggets which just gets chucked in the fryer as well, as well as the bacon and desserts in there. There are small amounts of the chicken frozen which is supposed to be used as emergency stock, but it normally is just in there until about a week before it expires, then our store used to just hold specials like 10 pieces for $5 to sell it ASAP otherwise it would just get thrown out. It takes like nearly a day to defrost too so that was annoying.
I don't know what the chip salt is but I agree it's like crack. My best friend still runs the KFC I worked at so I'll just get some off him because he always orders "too much" of whatever sauce or salt I want and gives it to me. If there's a way I can tell what is in it once I have a box of it let me know and I'll try to find out for you.
