So about goat cheese...

Is there only one type of goat cheese? If we talk about cow cheese, there is a plethora of different types of cheeses.

Can I get goat cheese mozzarella and goat cheese sharp cheddar? Or is the only available product "Generic Goat Cheese A?" All of the goat cheese I have had has been the same. It is not horrible, but it is not delicious.

Also, general cheese thread. What goes into making different types of cheeses?

You can make a variety of different styles of cheeses with goat milk. There are goat milk goudas, goat milk bries, goat milk cheddars, goat milk feta etc... all very different than the "generic" chevre log ish kind of thing that you can buy as "goat cheese"

Just always expect your goat milk counterparts to have that undeniable earthy goat presence, as well as having much less moisture than their cow counterparts. Depending on where you live, there are more goat cheeses available to you because of the usual smalerl-scale production of goat cheeses.

I have no objection to Goat cheese (or whatever cheese derive from it) but please don't talk rubbish, if it's made from goats milk it's a very different cheese!

It may not be as great for a mozzarella because goat's milk contains less fat than cow or water buffalo milk.

That stuff is just called "goat cheese" because there's no particularly good, distinct name for it (PROTIP: Chevre literally just means goat). It's basically the goat milk equivalent of farmer's cheese or queso fresco.

You're right it's not truly a cheddar or gouda or whatever. The key word is style. Many people make many cheeses using goat milk in imitation of popular styles of cow milk cheeses. The idea is that there many different takes on what can be done with goats milk to make a cheese, never mind the names.
