Simmer the onions, garlic, peppers, tomatoes, celery, and spices for half an hour in either butter or bacon grease, then fill it up with water and throw your chicken (and dried chilies if you want, pretty much a necessity for me) in. Boil it until the water has mostly evaporated then pull the chicken out, shred it, and throw it back in. Stir it up and it will absorb all the juices and then you're good to go. Add corn or beans if you want to stretch it further.
