I usually make whole wheat pita pockets.
3 cups of whole wheat flour
1 cup of white flour
1.5 cups of water
1 tablespoon of molasses.
2.25 teaspoons of yeast
1 teaspoon of salt.
put in bread machine and set to dough and wait 1.5 hrs
Then take dough out and divide into eight pieces, roll them out, and let them rest covered in damp cloth or plastic for 30 minutes, then preheat oven to 350, and bake pita for 8 minutes, then cool on a rack covered, then stuff them in freezer bags and put them in the freezer.
Nuts and seeds of course rye flour will help give bread flavor. adding lots of oil, salt and sugar is not advisable.
