How does one make perfect french fries?
I have acquired a deep fryer, but I do not posess any form of special cutting equipment. Will a regular knife do?
Also, what kind of potato shall I look for?
Any other tips?

Look for stuff that Kenji wrote on Serious Eats.
His tip for super crispy fries was to fry, freeze, then fry again.
He used russett potatos I believe.

Cut the taters up and then blanch them in the deep fryer at 225 for like 7 minutes.. Let them cool, then fry at 350 for crispy ballin ass fries

Its either 200 or 225, iforget.. And russett taters are pretty much the go to french fry tater

Belgian here. You should use "bintjes", slice them in fries, put them in water to rinse, dry them, pre-bake them once in 150 degrees celcius for a couple of minutes, and finally bake them off in 175 degrees celcius untill golden brown. Put them in a bowl with paper to remove excess fat, sprinkle a bit of salt over them and voila

i tried cold frying a couple of days ago and it turned out great

basically you put the potatoes in cold oil and slowly increase the temperature to 350

takes about 20 minutes with almost no prep time

the fries get really soaked with oil while the oil is cold, dont do that

just boil them for 20-30 minutes before frying and you get the same but better

Actually, I know it's counter-intuitive but the cold frying method results in LESS oil being absorbed compared to the standard double-frying method.

Cut boil in water until tender fry once at 350 for a minute freeze this can stay in freezer for a month, crank fryer to 375-400 fry until golden brown

Problem with 2 fry method is inside of fries aren't fluffly and they get soggy quickly

Asians need to stop cosplaying. The species just doesn't look in any way near the anime and Manga they are supposed to represent. Leave it to the whites to fulfill all the Asians beliefs in beauty. What with their non squinty eyes, big multicolored eyes and hair... fair skin... what Japanese think is beauty is in fact a blonde haired blue eyes white girl. Don't let the multicolored hair and eyes deceive you, that's just to differentiate characters because the quality of their animation is so low.

Salright... not every country can be the best. Anyways, best freedom fries are done in local peanut oil. Don't go all elevation burger with me thinking olive oil can be raised to a high enough temperature to make them crispy.

Cut up potatoes thin and lay flat on a Tupperware tray and Bake at 575 for 10 to 12 minutes. Squirt with lemon or lime half way through. Perfect fries.

Cut them up thick, at least 10mm.
Use maris piper potatoes
Peel them and soak in cold salted water for a few hours and rinse. This can be omitted if you don't feel like it.
Fry low for about 6 minutes (140-160C)
Fry high until crispy brown (190C)
Once done, don't leave them to cool hanging over the fryer, as they will get soggy. Best way is to give them a good shake to get off the oil and dump them into a hot tray with plenty of salt and maybe kitchen roll.
These are great with gravy...
