I'm originally from TX, and now live in NorCal, and you wouldn't believe the abominations they called bbq out here. When I want smoked brisket or pulled pork, I make it myself, because you can't find the real thing anywhere out here. It's sad. And even the places that have smoked sausage, it's not right. Not right at all. I have a meat grinder, but I haven't started tackling that yet, that's next on my list. Now, to California's benefit, even though they can't bbq for shit, they can make mean grilled and rotisseried meats, like Santa Maria tri-tip and Porchetta.
