I love liver (if you like liver as well then try to make peanut-butter, jelly and liver sandwich)
Hearts are OKAY. I don't remember any dish that blew me out of the water
Calf brains - tried it poached and then fried. It tasted like a snot, will need to try it in some high-end restaurant.
Bone marrow - AMAZING in any shape or form
Stomach - mixed feeling. Some sausages (Andouille de Guémené) that use stomach smell like REAL SHIT ... On the other hand when they are done on skewers stomachs weren't as horrible
Have you try kidneys, gizzards, testicles, "beaver anus", glands or other??
