It's a bunch of boneless turkey thighs held together with transglutaminase then cured and smoked the same way pork bacon is made.
While I love me some piggy meats, I recently-ish, a few months back, tried some beef "bacon" a Mohammedan underling brought to work for me to try. You know, it's actually pretty good. I was worried it'd be shit, like how beef hotdogs are utter crap to me, but it was damned tasty. I forgot the brand, but I /think/ it's Godshall's, too.
Since it's got streaks of fat in it like proper bacon does, beef "bacon" can do everything pork bacon can.
