I bought salmon. After bringing it home and preparing it, I noticed it smelled bad, kind of sour. I tried picking it up but noticed it was extremely slimy. I took a knife a scraped this mucus looking substance on the flesh of the fish. Is this safe to eat? I took most of it off but the fish is probably going to taste horrible.

I've had this problem before with oven-baking salmon, the ooze itself is just how the fish reacts to breaking down and it's basically squeezing extra protein out. It doesn't look pretty but it won't hurt you.

That salmon is CHUM grade. Probably from china. I used to cook at a Native American casino. Sovereign state has own set of health regulations. Salmon was labeled CHUM on box. We would cook this up with lemon & capers and push it out to the buffet all night.

So far I have experienced no illness and it has been nearly 6 hours. The salmon tasted awful but I couldn't let a good piece of fish go to waste. I just cooked it a little longer. The dogs enjoyed it.
