Water absorbs the sulfur compounds that make up the onion's defense mechanism, and helps with making you not cry like a little bitch.
The culinary program my gf goes to suggests chewing gum while you cut, but that doesn't seem to work for everyone.
tl;dr chewing gum might possibly work, but short of springing for goggles, try not to cut yourself while you chop under the tap.
