bad because everything in your pic is too wet. the smell will be a cue as well, if it smells moldy/spoiled then it is and I bet that your thing does

Duck breast? If it's white just brush it off with a toothbrush, dab the spot with vinegar and hang it back up. Also you should only use a single layer of cheesecloth or it won't dry properly.
