You can do as you suggested, taking one out of the freezer each day to thaw. I wouldn't keep more than 3 days worth in the fridge at a time. It doesn't taste as good after that.
Be sure your food is cooled before putting lids on anything. Condensation will make everything taste bad. Still edible, just taste bad.
Personally, I cook chicken for the week and just store that. Freeze 2/3 in tupperware and keep 1/3 in the fridge. It usually takes 1.5 days for one my containers of frozen chicken to thaw in the fridge. I make rice every few days and just eat veggies raw. Makes for very fast dinner prep. Best of luck.
