I would just add that, while their feeligns for each other are evident, I get the impretion that they wouldnt start dating each other and acepting all this crazy thigns until the last episode. Aang would be more mature at the end of the season, with all the development of Book 3, it was on this season that Aang and Zuko really became the closest allies, and on this AU it would be the best place to put hittings toward each other.
About the date on Ba Sing Se, I think that could be interesting if the two were on disguise, both kind of know who the other are, but they want to "investigate" further.
Uzumi - In canon, Bryke described Ozai as vain, and I believe that Uzumi would take it up to eleven. Basically, Cersei if she was able to fight kung fu and manipulate fire.
About Toph and Suki - I think that we could genderbend Suki into Sasuki, so we could have that conection between Sokkara being a warrior on a society that dont allow girl to be warriors, and Sasuki, being a kyoshi warrior while still being a man.
