After all, this is a bloodline chock-full of guys who solve millenia-old riddles no one else can figure out or even get to alive, slay giant monsters and OP sorcerers alike that can take down entire armies singlehandedly, purify the entire world of evil by thoroughly killing it from the most basic lackey to the mastermind himself, and save the world as part of the normal process of becoming fully-grown men. Plus Link's whole thing is courage, which often translates to throwing himself at something over and over until it breaks and submits to his superior willpower, be it a monster, a puzzle or anything else.
It only makes sense that such a trait would extend to preference in women as well, with the hordes of girls who throw themselves at Link with their legs wide open getting ignored or friendzoned, while the occasional ones that show no blatant interest or force Link to actually do something if he wants to get the ball rolling (Zelda, Midna, etc.) garner awkwardness and/or visible interest from him. Also, there's been one or two times where women clearly out of the typical "range" of a guy his age/stature got him to turn his head in interest, such as that one shopkeeper/innkeeper lady in Twilight Princess with the huge rack that he gets lost in for a moment.
Simply put, I think he just doesn't like easy women, and gets the hots for the ones he actually has to try to court, or even ones who show no interest. Then again, who the fuck knows.
