Because if you tried to lift a train you would end up digging arm-shaped holes in the wall of the train, or pushing your own body into the ground. Also if you lifted something heavy from the side you would just flip your body upwards awkwardly unless you got under it.
Seeing someone stop a fucking train is awesome as hell, but it's also just a visual spectacle, so if we're really going full-out power level here, you need to add a couple powers to Mr. Incredible's list to compensate, kind of like how Superman has field generation bullshit sometimes to justify how he can pick up a boat and not have it just fall through him.
