The 2008 show doesn't make sense without knowing who Grievous and Ventress are, and both of them were given proper introductions in the 2003 series.
It's very easy to blend the 2003 series with the 2008 series.
Just watch the 2003 series up until you see Obi Wan in the rain in volume 2, then stop there, switch over to the 2008 series and watch it all (I've found if you watch the episodes in chronological order, the ones that are bad end up being not as bad), then switch back and finish the 2003 series to at least get some closure for the war.
I did that last year and then watch Episode III again for the first time in years and the movie ended up being a lot better than I remembered because of it.
