The MC would get more upgrades through curse progression. For example, reptilian eyes for "Heat Vision", slow fall with wings, scales for hotter environments, horns for headbutt/wall charge, fire breath. Upgrades would cause permanent changes to base form, thus shortening the dragonimity meter
Equipment could be bought from shops to raise stats, but certain ware could/could not be worn at certain levels of Dragongirliness (gauntlets won't fit over clawed hands) and certain shops/locations could only be entered at certain levels (Bar would think you're there as a barmaid at a certain level, unlocking backroom but disabling use as a shop) but certain items could modify the bar (fake beard could lower meter, thus allowing access to previous features).
Depending on the item completion, time playing, and other choices you would get a different ending which has the knight removing/accepting/"being consumed by" the curse.
Also, to answer original question, there was idea for an shopkeeper alchemist who would secretly have a horsecock, which you could discover through sidequest/easter egg. An alternate campaign would be interesting, with her using potions to change the type of cock she has, thus her abilities (Ex. Spider-cock for wall climbing, kangaroo cock for jumping)
