Amperage is a retard word for current, derived from the unit for current, ampères (or amps for short).
Your battery has a certain capacity measured in Ah (ampère hours). If you draw a current of 1 A, the battery will last (capacity in Ah) hours.
As your battery discharges, its voltage decreases. Compare an inflatable balloon that you let the air out of: at first it'll push the air out really hard but as it deflates the air pressure decreases.
Your battery can only deliver a certain maximum current. This, along with capacity, is influenced by temperature. If the car tries to draw a higher current than the battery can deliver, the battery's voltage (compare air pressure in balloon) drops down below 12 V which is not enough for the car's electrical system to operate.
