but a lot of strength programs do every other day and start with squats, so that would be every other week 4 days of squats

For a beginner (ie first 6 months) no depending on diet/rest. It may impair optimal muscle recovery though.

I wouldn't do squat more than 3x a week beyond the beginner stage unless youre cycling otherwise so hello to overtrain town.

I just started squatting and deadlifts and my routine says to do them every other day. Usually for at least 3 days after the workout my legs are so sore they're practically useless. Should I go to the gym even if they're sore as fuck or should I wait until the pain mostly goes away?

just keep going, the more you work the muscle frequently the soreness eventually goes away, i squat 3x a week, didn't take longer than 2 weeks of forcing through the soreness to never get soreness again

Ah okay. Any advice on getting my squat lower? My form is shit and I can only get about halfway as low as I should. Starting on about 40kg. Also using a smith machine because fucking planet fitness.
