So I assume SS isn't the be all end all of beginner routines even though some act otherwise. What routines did people do before SS? If a complete gym newbie wanted to eventually get into Oly lifting or power lifting, what routine would they have started on?

SS seems like for people who are in a hurry to get stronger. What If I don't care how fast I get to 3pl8?
