The reason why we do stuff like hiit, and high intensity exercises in general is because its more time efficient and because our muscles will recover. Afterall, fat gets used throughout the entire day if you are at a caloric deficit. The ENTIRE day. Which is much more compared to the fat we use during exercise.
But for the purpose of using fat DURING exercise, long ass walks are the best.
