I'm just wondering if the speed of the ram has a significant impact if you are at the high end range?

2133hz vs 2800hz for example.

It's gonna be ddr4 sticks.

ram frequency is the most common bottleneck
higher cpu clocks will get bottlenecked if your ram speed is slower than your cpu
make sure to buy the fastest ram possible for the best performance :^)

Speed of ram doesn't make a noticeable difference unless you are running integrated graphics. However I have noticed on systems with 1066mhz or lower ram frequency with the same CPU, it felt noticeably slower. Could just be placebo. But really, the difference is integrated graphics, such as Intel HD or an APU. Makes it perform much better whether it be encoding video or playing games.

but at higher frecuencies worse latency usually. So you have to question what you want to do and what use cases you have in mind.

For example in audio processing it's better to have good latencies when possible

Duh but you have to take the rotational velocidensity of your hard drive into account which is gonna shoot magnetic ions at your RAM and potentially slow it down. The higher the frequency of your RAM the more likely you're affected by this.

So your 2800MHz RAM might go down to a mere 2133MHz RAM and believe me, you don't want 2133MHz RAM, it feels like Pentium IV all over again.

So the sweet spot is 2400MHz.

I'll be mainly rendering video and converting files.

The gaming part is just a bonus.

The cpu will be an i7 and gpu a 980ti unless nvidia brings out news of their new line sometime soon.

If you have dedicated graphics, the difference will be negligible.

2666 is the best speed. anything above will offer 5% improvements. anything under suffers 15~20%.
