that's how it works

but when the mouse isn't held perfectly 'straight', you subconciously try to correct for it, the mouse doesn't actually know which way it's facing, only which way it's moving

The mouse knows where it is at all times. It knows this because it knows where it isnt. So by subtracting where it is from where it isnt, or where it isnt from where it is, whichever is greater, it attains a difference or deviation.

It doesn't.
It only knows which way the surface it is on is moving.
Turn the mouse upside down. It now works in reverse.
If it knew which way it was facing, this would not be the case.

If I pick it up so that the side is facing up, place it back down then move it up, it still moves sideways.
