Which phone is the most "simple and secure" today?

I'm looking for a new phone and been Nokia user ever since I got my first brick phone, but Windows is really starting to be a huge turn-off for me. All those unnecessary apps, tracking programs and fancy shit I don't need, slowing and crashing the phone constantly.

What would you recommend for simple users who just want to text, call and be on the internet?
