Compiling isn't so bad. For the typical person, sure. But for programmers, it's a way of knowing you compiled the source, and nothing was added than what you downloaded and hash checked from the repository.
Are lone programmers going to analyze every line of code themselves for security or privacy concerns? No. But the fact that the source is open to the community enables that community to spot these concerns together.
For the non tech elite, I guess you'll just have to trust everything you decide to use.
In today's world, most people have no idea how susceptible their privacy is to invasion, or have grown so shameless that they don't care... or trust that the law will be on their side if anyone breaches it and commits fraud under their identity. While this is terrible, I can understand their lack of care and/or better privacy practices. It's not easy.
