Most things you can read about in books are not available online. You might argue that Libgen or similar give you access to all of these, but you'd find that even these sites lack a lot of things that haven't been digitized. Same goes for JSTOR, Springerlink and other "legal" alternatives (and they have a paywall, so it's not even free).

The Internet only favours the most popular information, so it's actually pretty shallow.

Only volume 1 can be found online.

Once you get to more advanced and obscure areas of mathematics, you'd have to be extremely lucky to find anything online from before ~1980. This includes books, papers and proceedings from conferences that are sometimes referenced from later articles. You have to go to a library and order a scanned copy to find them. Same goes for most other fields too.
