Apart from Blue I wouldn't care. If a chef prefers to make it a certain way then that's the best stake you can get in a particular restaurant.

2.) if you liked it , do you always cook it blue rare/ order it that way?

Not at all

I like it very much, i don't always cook it blue rare, sometimes just rare. I like it that way, if you have good meat it's warm and soft inside, delicious.

Pretty much everyone here already tried it so no, I never even thought of it since you're asked in restaurant how you want your steak cooked.

you cant slaughter cows legally
until recently, the 'beef' you got was from bulls/bullocks.
Now, it is only buffalo meat that is available.
However, if you are willing to shell out more money, you may get cow's meat (illegally)
