God fucking damn it /k/. How do I sharpen a knife? No matter what I do, I make the edge worse. I have a few small files, and one of the red ones of these at my disposal.

Buy a kitchen knife sharpening stone. It should have 3 grades on it. Rough, medium, and smooth. Go in that order at a 30 degree angle or so. It literally just takes practice, watch some youtube videos. Don't forget mineral oil on the stone too just btw.

OP, get a waterstone. 1000 grit from either Naniwa or King. Look up tutorials on youtube.

Or, if you're lazy, just get a cheap belt grinder, or worksharp belt grinder. Really easy to free hand a razor sharp convex edge on those.

Literally not actually. I'm an autist when it comes to sharpening and I can tell you that's wrong. A properly sharpened razor, OR properly sharpened wood working tool, is way sharper than what you will ever get on a belt grinder.

Just because you can cut hair with it doesn't make it as sharp as a razor.

Being the autist you are, I sure hope you understand the difference between a belt sander and a belt grinder. Using proper grit belts, you can get a knife as sharp as a properly sharpened razor or woodworking tool.

Pretty well actually. The saw is crap so I've been batonning like crazy with it for a few weeks now and it still cuts. Not as good as a nor or a scalpel. I can butcher just fine with it. I did have to grind a good edge on it to begin with. Its not ideal but it works.

Because I'm not buying a proper stone is my guess. People will freak out over anything. Fact is a mug bottom does work and works just fine. I never did a guide on it. I did it because an anon said a mug and it worked.

No, it's because he's advocating using the [unglazed portion of the mug] to hone the edge of the blade. It does actually work, if you know what you're doing, and IIRC there are in fact commercial sharpeners that use ceramics.

I did my electrical apprenticeship at the one of the largest freezing works in NZ (slaughterhouse for you burgers.) The most common issue was strain to the wrist.
so they had a group set up a guy from the office who knew nothing, a nurse, a couple of guys from the local Uni, couple of older Butchers, and 2 engineers. they went through EVERY method of sharpening, Built a rig to test the force required To make the cut while the guy from the uni looked at the edges through microscopes and wrote a paper on the whole thing.
In the end the best edge is formed using 2 Grinding stones rotating into each other kinda like )( but with a slight overlap. you then take a coarse stone at 15 degrees to form the edge,

guna drop some shit paint images with next post. the TLDR is that after they started training people in the correct method Strain injury dropped by 80%

with back of knife toward you push away from yourself starting at the base of the blade working toward the tip with a single stroke do both sides an equal number of times stopping only when you can get a good bite into your nail when you test the edge. swap to fine stone and do one reverse motion with the fine than usually 10-15 of the normal stroke. your edge is now formed. but it will have this lip of jagged shit you can only see with a good microscope, find a lump of plastic and draw your blade over it this folds over the jagged shit so you can take it off with a Butchers steel. proceed to steel blade at 15 or so degrees maintaining the 15 degrees the entire length of blade this is science applied to knife sharpening. this info is about 6 years old now so maybe there is some new miracle sharpener but i doubt it

Not a knife in my house that cant plink off hairs, or whittle hairs if thats not sharp enough for you.

First time i used it i went to see how smoothly it could slice a tomato, went to just slice the top off of a tomato, pressed a little hard because i didnt expect it to slice so well, cut right into my thumb like the tomato wasnt even there. come on m8.

Disregard all other suggestions that are sub $80

However they shapen by removing a lot of steel, it will wear down the knife way faster. So if you have a nice one you really don't want that.

My dad is a bricklayer and just does his on a brick but it eats the blade pretty quick.

Comes down to if you care about the knife.

Just learn what a burr is.
3 steps to sharpening a knife.
Put an edge on it with a coarse ass stone or very carefully with a grinding wheel. You know you're done when theres a burr.
Polish that edge to your level of autism on a SLIGHTLY deeper angle on a fine stone. Original edge angle and second angle depend on the use of the blade (flatter for boning, steeper for axe, etc. Flatter stays sharp longer with light work steeper takes harder hits without blade damage.
Strop or steel the polished edge to set it.

Not really that hard. Once you have a good burr and smooth it out you can shave with it. Polishing just makes it last longer. You can polish with anything thats harder than your knifes steel. Coffee mug, screwdriver, glass. As long as its smooth, it will work.
