What guns did people use back then? What calibers?

Were they any good or was hitting anything luck?

How are we defining wild west? If you mean the era of the open range cattle drive, that lasted from the close of the civil war to the proliferation of barbed wire, a span of only about twenty years or so. However, one could argue that the wild west lasted from the Lewis and Clark expedition in 1804 to the closing of the frontier in 1890 (or even to the wild oil boom towns beyond into 1920). This encompasses quite a time span and a good many guns.

Anything they could get their hands on, I take it. There was a lot on innovation, and trial, and error, so there were a lot of guns, and lots of calibers.

None of them were made from plastic. Seriously, watch a few westerns, and you'll see. The later the year, the more "advanced" the technology.

My 3rd great grand father used the Colt M1861 Navy .36 cal. He was union Calvary he carried 4 revolvers and one rifle. The reason was there isn't a heavy recoil with that revolver. A killing shot wasn't high on his list, in the sense that a larger cal has. But he wanted the next five out fast and accurate. Wounds were more common from running horse back than critical shot placement.
