It's a setting where most of what Roddenberry saw as Earth's petty problems (racism, religion, etc) have been overcome. The crew of the Enterprice is made up of people from all possible kinds of backgrounds, and everyone is pretty much equal. Keep in mind that it's from 1966, and that both Blacks, Japanese and Russians are on the crew. The racial situation in America, and the Cold War, were all a thing of the past in Star Trek.
It's influential not only on other works of science fiction, but arguably also on people's conception of space and technology.
It's just thoroughly optimistic, humanistic and futuristic.
And that's not talking about the events of the various episodes, just the overall themes.
It's far from a perfect series, but it's worth checking out, if nothing else.
