I haven't seen Seven, but '66 Ultraman has a lot of vehicle and gadget stuff each episode before they inevitably need the big guy to beat the monster.

U7 is more of the same but in a great way. I actually love the teamwork and saving Ultraman for the end (though Ultraseven benefits from not having the 5 min countdown). It gives the show room to be more sci-fi/twilight zone-ish.
