Because while fighting with mechs is cool, taking orders from losers is not.

So by saying you're not a soldier after you've already fallen into the cockpit, you get to keep the mech without having to listen to icky grownups.

Mecha protagonists don't like identifying as a destroyer.

They're clearly fighting for something, they're fighting for love, home, something sappy.
