Mechs can keep fighting after losing a limb. The Gundam's iconic final battle has it still fighting after losing it's head. That's a good way to add drama while still allowing a flashy win. If a jet gets a wing shot off it's going down and will either crash or land, either way the fights over.
Likewise after a climatic battle where lots of damage is taken, a human hero will typically need a while to heal up. See the early arcs of DBZ where Goku would frequently be messed up and out of action for months in show time. Mech can be patched up by the next episode, although as they look for reason to have characters upgrade to different machines that doesn't always happen and we get stuff like Savior getting it's limbs and head removed and the show says it can't be fixed because Athrun had an upgrade coming.
