So it seems that Limestone is the eldest of Pinkie's siblings, and Marble is Pinkie's (slightly younger) twin. Maud's still rocking her schoolwork, and Pinkie's living with the Cakes in Ponyville, so that doesn't leave the most free hooves around the rock farm. Perhaps that's a source of tension for Limestone? Or maybe she's always been a bit tightly wound. She did love Pinkie's first party, so clearly she's willing to loosen up a little. And for all her shyness, Marble must be a strong and diligent worker.
At some point they might look into some spices or something, though. Pinkie seems to be the only one working at creating food with a greater variety of ingredients. Maybe that's what spurred her into applying at Sugarcube Corner in the first place.
